Perfect Waffles

Ingredients

2 cups APF
2 cups milk
2 eggs, split in white and yolks
1/2 cup cooking oil
1 1/2 tablespoons baking powder
1/4 teaspoon salt

1. Combine dry ingredients (flour, salt, baking powder) in one bowl and mix.

2. In a medium bowl, beat the egg yolks and add the oil and milk. Take this mixture and pour into the bowl with the flour mixture to start the batter.

3. Mix this a little bit, but make sure to leave lots of lumps in this batter.

4. Rinse out the medium bowl, then whisk the egg whites frenetically until they form peaks.

5. Fold the egg whites into the batter. Make sure you can still see swirls of the egg whites.

6. Pour batter into a waffle iron. Don't overfill or it will come out the sides. Bake until done--usually there are instructions with the waffle iron.

NOTE: If you're lazy, hungry or can't get the kids to leave you alone, then you can just beat the whole eggs and skip steps 4 and 5.
